Earth Day Parfait

Naturally…vegan food is great for the environment, so we love to celebrate Earth Day with this appropriately hued (and delicious!) fruit and granola non-dairy yogurt parfait courtesy of by CHLOE. Chef Contributor, Lauren Kretzer.

It’s the perfect way to sweetly say, “Earth, we <3 you!”

INGREDIENTS

1/3 cup vegan granola (homemade or store bought – we love Trader Joe’s Organic Toasted Coconut Granola)

3/4 cup vanilla or plain non-dairy yogurt (we love brands like Anita’s, Kite Hill, and Forager Project)

2 fresh kiwis

½ cup fresh blueberries

PREP

Pre-wash fresh blueberries. Peel and chop fresh kiwis.

METHOD

Alternate layers of granola, non-dairy yogurt, fresh blueberries and kiwis in a clear glass or medium sized mason jar.

NOTES + SERVING TIPS

Serve immediately.

You can use extra fruit and coconut chips for garnish!

Storage:  store covered, in the refrigerator for up to 2 days.
