Whether by plane, train or automobile on your journey outta town, it can be tough to find a healthy snack while traveling. We’ve definitely fallen victim to our share of cinnamon sugar pretzels, pre-packaged munchies and 3-day old bagels.

Make one (or all!) of these easy snacks the next time you’re skipping town. With these treats packed, there’s no reason to stop at unhealthy drive-thrus, train station kiosks, or resort to trying any in-flight meals.

Problem = solved.

 

SPICY KETTLE CORN

We’re all about a sweet and spicy snack. This spicy twist on classic kettle corn has just the right amount of kick. Huge fans.

METHOD:

Heat ¼ cup of coconut oil in a Dutch oven or sauté pan over medium heat. Add a few popcorn kernels to the pan and cover. Once the kernels begin to pop, add ½ cup of kernels to the pan with 2 tablespoons of sugar, ½ teaspoon salt, ½ teaspoon of cinnamon and ½ teaspoon of cayenne. Toss well to coat the kernels. Cover the pan again and move kernels around to prevent any burning.

When the popping has ceased, remove from heat and let cool. Add sea salt or additional seasonings, if desired.

 

NO-BAKE DATE BARS

These naturally sweet, chewy, nut-filled bars will definitely hold you over until you reach your destination. Just be sure to make them for all your travel companions!

METHOD:

In a food processor, combine 1 cup of pitted dates, 1 cup of dried fruit (cranberries, mango, raisins, papaya, etc.) and 1 cup of nuts (almonds, cashews, peanuts, pecans, walnuts, etc.). Pulse until the ingredients clump together into a ball.

Remove the dough and place on a piece of wax or parchment paper. Spread into an 8 x 8 square. Wrap in parchment and refrigerate for at least 1 hour. Once chilled, cut into bars and individually wrap each bar in plastic or parchment wrap for ease on the go.

 

BAKED CRISPY CHICKPEAS 

Instead of grabbing a bag of potato chips at the nearest convenience store, bake this savory snack the night before your next trip. This is the recipe that keeps on giving! Try finding your own signature seasoning mix with the addition of cayenne, za’atar, cumin or a hint of lemon. METHOD:

Toss 1 can (15 oz) of rinsed chickpeas with extra virgin olive oil, sea salt, freshly ground black pepper, lemon zest and Italian seasoning (we like a mix of dried basil, parsley, oregano, thyme, rosemary with a hint of onion and garlic powder). Spread on a baking sheet and roast in the oven at 400°F, for about 30-40 minutes, until crisp and lightly browned.

 

SAVORY TRAIL MIX

This is not your average run-of-the-mill trail mix. Impress your friends with this unique variety.

METHOD:

Combine pistachios, cashewsalmonds, peanuts, wasabi peas, goji berries, chopped dried ginger, and a touch of sea salt.
