Dress 'em up
A perfectly fried, golden, crispy potato Latke has two best friends.
There’s applesauce to sweeten things up a bit, and sour cream for tartness and a nice creamy contrast to the oily latkes.
Store bought versions of both will do the trick, but take it to the next level this Chanukah and make yours from scratch.
Here are our no fail recipes for Homemade Applesauce and Vegan Sour Cream:
1 Tbsp coconut oil
4 apples, cored and cut into chunks
1 pear, cored and cut into chunks
1 Tbsp ground cinnamon
½ lemon, juiced
¼ cup organic sugar
½ cup water
sea salt, to taste
In a pot, melt the coconut oil and add the cut apple, stirring continuously. Once it starts to soften, add the pear and cinnamon and continue to cook.
Add the lemon juice, organic sugar and sea salt and continue to cook. Add water and stir, cooking over medium heat for approximately 15 minutes.
Cook another 5 minutes and then let cool.
NOTES + SERVING TIPS:
Try mix and matching your 4 apples for an added dimension of flavor – we recommend trying gala, fuji, granny smith, and honey-crisp. For pears, the Bartlett varietal has the best texture!
VEGAN SOUR CREAM
Makes 7 ounces
7 oz packet of silken tofu
¼ cup olive oil
1 garlic clove
1 tsp dijon mustard
1 Tbsp lemon juice
½ tsp sea salt
¼ tsp xanthan gum
Combine all ingredients into a high speed blender and blend on high. Add xanthan gum and blend for another minute.
