Anything but boring Matzo Toppings

Passover is just around the corner, and with it comes matzo for dayz.

Now, we love the unleavened, cracker like “bread” as much as the next gal, but sometimes it’s screaming for a little pizzazz.

Here’s your guide to turning up the volume on matzo this Passover. From chocolatey goodness to roasted tomato richness, matzo is the perfect crispy vessel for all your fav toppings – morning, noon, or night!

Below are some of our favorite combos. Try them out for yourself or use them as inspo to create your own delicious matzo treats.

 

AVO MATZO

This is our Passover take on your fav brunch treat… avocado toast! It involves mashed avocado, sea salt, lemon juice, and a sprinkle of cumin. Jazz it up with sun-dried tomatoes, roasted veggies, or anything else delicious you have around the kitchen. Add a sprinkle of chia seeds for an extra healthy boost.

 

GO BANANAS

Do dessert right with decadent chocolate and sweet bananas. We recommend a chocolate nut spread or just melted chocolate topped with sliced bananas, a sprinkle of cacao nibs, a drizzle of pure maple syrup. and a dash of sea salt for good measure. Dessert will never be the same!

 

TOMATO, TOMATO

Roasted tomatoes taste good on just about everything, but our favorite way to eat them involves vegan ricotta and some delicious aged balsamic. To make, spread a healthy layer of vegan ricotta cheese on your matzo, a sprinkle of sea salt and top with roasted tomatoes. Garnish with chopped chives and a drizzle of that delicious aged balsamic vinegar for the perfect balance of flavor.

 

MATZO MOZZ

We took inspiration from one of our favorite flatbread and crostini recipes perfect for entertaining. Spread a layer of fig jam on your matzo followed by a thin layer of sliced vegan mozzarella. Toast briefly in the oven to melt the cheese, then top with fresh arugula lightly tossed in lemon juice.

 

FRUITY GOODNESS

One of our favorite memories from childhood involves making “fruit pizza”. This clever creation was no doubt featured in one of those Pillsbury cookbooks trying to get us to use their products for literally everything. Many of the ideas were outrageous, but this one stuck. Bring a little nostalgia to your matzo feast by making fruit pizzas. Mix some pure maple syrup with vegan cream cheese spread to create a more spreadable, delicious sauce. Spread over matzo then top with all kinds of delicious fruits from strawberries and kiwis to pineapple. Top with a squeeze of lemon.

 

NUTZO MATZO

For a healthy breakfast treat, grab some almond butter and your new best friend, matzo! We like to spread the almond butter all over the matzo then top with chopped dates, chopped nuts, and drizzle with pure maple syrup. Add in sliced fruit or chia seeds to pack an extra healthy punch.
