Kite Hill’s Olive Smothered Cheese

All month long, we’ve been treated to #MeatlessMonday recipes from Kite Hill’s Monte Casino.

As the Co-Founder, Product Developer, and Cheese-Maker Extraordinaire, Monte is always thinking not only of new plant-based products, but also interesting ways to use them.

This week he’s sharing with us a delicious appetizer of soft cheese with fried olives that’s sure to impress guests or satisfy a casual weeknight craving.

Monte says, “This dish makes a lovely rustic appetizer or is a unique part of a cheese plate. The farmer style cheese is steeped with herbs to be eaten with crusty, toasted bread.”

6 oz. Kite Hill Soft Fresh Artisanal Cheese

2 Tbsp olive oil

1 sprig rosemary (2” piece)

1 sprig sage (2” piece)

1 sprig oregano (2” piece)

1 cup mixed olives

1/8 tsp sea salt

1/8 tsp freshly ground pepper

4 cloves garlic

1 loaf crispy bread (optional)


In a medium sauté pan, heat up olive oil over medium heat.


Add the herb sprigs to the hot oil and allow to crisp.

Remove the herbs from oil and set aside.

Add the mixed olives and cloves of garlic to the scented olive oil and allow them to lightly brown and slightly crisp.

Add the herb sprigs back into the pan and season with sea salt and freshly ground pepper.


Put the whole soft fresh artisanal cheese in a rustic bowl and pour hot olives, herbs and oil over the cheese.

Notes + Serving Tips

Serve with a loaf of crispy bread.
