Makes 1 Large Loaf
We love coffee and we love bananas, so why not put them together? Espresso powder adds the perfect kick to this healthy banana bread to give you that necessary jolt of energy in the morning.
1 ¾ cup whole wheat flour
¼ cup ground flax seed
½ tsp baking soda
½ tsp kosher salt
1 Tbsp espresso powder
3 ripe bananas, mashed
½ cup coconut oil, melted
¾ cup pure maple syrup
2 Tbsp non-dairy milk
1 tsp apple cider vinegar
1 tsp pure vanilla extract
½ cup walnuts, chopped, tossed lightly in flour
¼ cup vegan chocolate chips (optional)
Preheat oven to 350°.
Line a loaf pan with parchment paper and lightly spray with vegan non-stick cooking spray.
Combine non-dairy milk and apple cider vinegar and set aside for at least 10 minutes.
In a large mixing bowl, combine whole wheat flour, ground flax seeds, baking soda, kosher salt, and espresso powder.
In a small bowl, combine mashed bananas, melted coconut oil, pure maple syrup, non-dairy milk mixture, and pure vanilla extract.
Add wet ingredients to dry ingredients and stir until just combined.
Fold in walnuts and chocolate chips as desired.
Coating the walnuts lightly in flour will allow them to equally disperse within the loaf.
Pour the batter into the prepared loaf pan.
Bake for 1 hour or until golden brown and a toothpick inserted into the center comes out clean.
Let cool for 10-15 minutes then remove loaf from the pan.
Cool on a cooling rack.
