For this recipe, we tapped by CHLOE. Chef Contributor, Lauren Kretzer to create delicious little bites of energy! You simply cannot beat the nutritional benefits of these babies. Plus, it’s super easy!

Bring it on, 2017 resolutions! This snack is a match-a made in heaven.

INGREDIENTS

¾ cup raw, unsalted cashews, soaked

¼ cup shelled unsalted pistachios

2 Tbsp hemp seeds

½ cup pitted dates

1 Tbsp pure maple syrup

1 Tbsp almond butter

¼ cup oats

½ tsp cinnamon

¼ tsp sea salt

2 tsp pure vanilla extract

½ tsp almond extract

2 Tbsp matcha powder, divided

PREP

Soak unsalted cashews, preferably overnight.

METHOD

In the bowl of a food processor, combine drained soaked cashews, pistachios, hemp seeds, pitted dates, pure maple syrup, almond butter, oats, cinnamon, sea salt, pure vanilla extract, almond extract and 1 Tbsp matcha powder.

Process until ingredients are completely combined and a solid, pliable dough forms.  Dough should easily hold together.

Roll dough into approximately 10 balls. Roll each ball in remaining 1 Tbsp matcha powder, gently tapping off any excess.

Place in an airtight container and refrigerate overnight.

NOTES + SERVING TIPS

Store in the fridge in an airtight container.
