In our sixth nutty blog series “I Didn’t Know a Nut Could Do That!” we consider the Pine Nut. Want to know the coolest thing about them? Pine nuts come from pine cones…………. we’re surprised too. Who knew that pine cones served a functional (and delicious) purpose?!

Small but mighty, Pine Nuts are not necessarily the type of nut that you snack on by the handful. However they serve other significant purposes in cooking, sauces and garnishing.

Add some crunch to your veggies with our Roasted Asparagus with Meyer Lemon + Pine Nuts or Sicilian Swiss Chard w/ Golden Raisins + Pine Nuts recipes.

Try a refreshing pesto dressing on the delicious Bob’s Red Mill Lemon + Mint Freekeh Salad.

Pine Nuts also have amazing health benefits! They’re packed with protein, iron, beta carotene, vitamin K, vitamin B, Vitamin E and monounsaturated fats, to keep that heart and immune system strong. You best be finding an excuse to get Pine nuts into your diet…

Unfortunately, Pine Nuts are pretty pricey due to the fact they have not one, but TWO shells that need to be removed to get the the good stuff. But man oh man, we love a good by CHLOE. pesto pasta.

Not a Pine Nut lover? We highly recommend our Walnut Pesto Sauce recipe as nutty sauce substitute.
