Peaches + CBD Cream Waffles

It’s peak peach season! Eating a tree-ripened peach at the end of Summer is one of life’s greatest pleasures. We love them as-is, and of course we wouldn’t turn away a slice of Peach Plum Crostata, or a refreshing Peach Smoothie either. That being said, we love finding new ways to use up our peach picking bounty, so this Peaches + CBD Cream Waffles recipe fits the bill (on so many levels)! Crisp on the outside, tender on the inside, these golden brown waffles are a staple to make time and time again. When you top them with lightly spiced cooked peaches and CBD-infused Coconut Whipped Cream, they’re what Summer dreams are made of.

CBD Whipped Cream

1 14 oz can coconut cream (we love Trader Joe’s or Native Forest brands), chilled, overnight.

2 Tbsp organic powdered sugar

1 tsp vanilla extract

1 tsp CBD oil (omit if preferred)


1 tsp coconut oil

4-5 ripe fresh peaches, sliced into ½” wedges

pinch ground cinnamon

pinch ground nutmeg


1 ½ cups un-bleached all-purpose flour

½ cup oat flour

2 Tbsp organic sugar

2 tsp baking powder

½ tsp sea salt

2 cups un-sweetened almond milk (or non-dairy milk of choice)

3 Tbsp organic canola oil (or other neutral oil)

1 tsp vanilla extract

1 tsp apple cider vinegar

non-stick cooking spray


pure maple syrup

vegan butter


Chill coconut cream overnight in refrigerator.

Slice peaches.

Pre-heat waffle maker.


Place chilled coconut cream and powdered sugar in a large bowl or in the bowl of a stand mixer.

Whisk on high for 1 minute (or until fluffy) with an electric hand mixer or stand mixer, fitted with balloon whisk.

Add vanilla extract and CBD oil and whip for an additional 30 seconds, or until ingredients are fully combined.

CBD Whipped Cream should be covered and stored in the refrigerator until ready to use.


Heat coconut oil in a medium non-stick pan over medium heat.

Add sliced peaches, cinnamon and nutmeg and stir to combine.

Cook, stirring occasionally, for 5 minutes, or until peaches are mostly cooked through, but still hold their shape.

Remove from heat and let cool completely.


In a large bowl, whisk together all-purpose flour, oat flour, sugar, baking powder and sea salt.

In a separate large bowl, whisk together almond milk, coconut oil, vanilla extract and apple cider vinegar.

Slowly incorporate wet ingredients into dry ingredients and stir waffle batter until combined.


Pour waffle batter (approximately ½ cup per waffle) into hot waffle iron sprayed with non-stick spray, and cook according to manufacturer’s directions, or until golden and crisp.

Serve waffles immediately with a dollop of CBD Whipped Cream and cooked Peaches, along with pure maple syrup and vegan butter, if desired.

To keep waffles warm before serving, place on a cookie sheet and keep warm in oven pre-heated to 200°F.


Keep Peaches & CBD Cream Waffles tightly wrapped in a refrigerator for up to 1 week, or in a freezer for up to 1 month. Re-heat in the toaster oven.

Store cooked Peaches and CBD Whipped Cream separately in air-tight containers in the refrigerator for up to 1 week.
