“Growing up I had a pudding cup in my lunch bag every day. Which explains why I am a total chocoholic now! Since going gluten and dairy-free, I haven’t had pudding! Well, it dawned on me. I use avocados in my smoothies to make my smoothies extra creamy, so why not use them with a little cacao to make my dream pudding bowl. Four ingredients later, my dream pudding bowl had been made!
1 tsp vanilla extract
2 avocados, peeled and sliced
1/2 cup cacao powder
1/4 cup pure maple syrup
1/2 cup + 2 tablespoon un-sweetened Almond Milk
pinch of sea salt
1 banana, sliced
Peel and slice avocados.
Add sliced avocados, cacao powder, pure maple syrup, almond milk, sea salt, and vanilla extract to a blender or Vitamix.
Blend on high, pausing occasionally, to scrape down the sides of the blender if need be.
NOTES + SERVING
Pour pudding into a bowl.
Add sliced banana + cacao nibs for garnish.
