Baked Apples w/ Salted Date Caramel

Apples, how we love thee! We literally never tire of ways to enjoy everyone’s favorite fall fruit. Our latest obsession is these Pecan Oatmeal Baked Apples with Salted Date Caramel. We’re not sure if it’s the addictively crunchy granola-like filling, or the straight-up sinful salted date caramel, but we’re enjoying these for breakfast, for dessert, as a post-workout snack. Yup, that’s right, these are healthy enough to enjoy first thing in the morning, yet taste decadent enough to serve for dessert.  Oh, and as a bonus, you’ll have extra Salted Date Caramel to enjoy for future use, so we won’t tell anyone if you want to start pouring on everything else, too.

Pecan Oatmeal Apples

4 large apples, cored

½ cup old fashioned rolled oats

¼ cup pecans, chopped

¼ cup raisins

1 tbsp hemp seeds

2 tsp pure maple syrup

2 tsp melted coconut oil

½ tsp vanilla extract

1 tsp ground cinnamon

1/8 tsp ground ginger

1/8 tsp ground nutmeg

1/8 tsp sea salt

½ cup water

¼ cup apple juice or apple cider

Salted Date Caramel

1 cup dates, pitted

½ cup coconut milk

¼ cup pure maple syrup

1 tsp vanilla extract

½ tsp sea salt


Pre-heat oven to 350°F.

With an apple corer or paring knife, core apples, leaving bottom ½” of apple in tact.

Chop pecans.

Pecan Oatmeal FILLING

In a medium sized bowl, add rolled oats, chopped pecans, raisins, hemp seeds, pure maple syrup, coconut oil, vanilla extract, ground cinnamon, ground ginger, ground nutmeg, and sea salt.

Mix to combine with a spoon.

Spoon ¼ of the oat pecan filling into each apple cavity until all apples are filled.


In the bottom of an oven-proof pie dish, add water and apple juice or cider.

Place apples upright into pie dish and bake for 40-43 minutes or until apples are soft and Pecan Oatmeal Filling is browned.

Let cool for 5 minutes.


Add dates to the bowl of a food processor fitted with an S-blade.

Pulse until dates are finely chopped.

Add coconut milk, pure maple syrup, vanilla extract and sea salt and process until smooth, stopping the machine occasionally to scrape down the sides of the bowl.

Transfer Salted Date Caramel to a small bowl.


When ready to serve, top each Baked Apple with a spoonful of Salted Date Caramel.

Baked Apples will keep in an air-tight container in the refrigerator for up to 5 days.

Salted Date Caramel will keep in an air-tight container in the refrigerator for up to 1 week and frozen for up to 3 months.
