WINTER SMASHED AVOCADO TOAST

It’s no secret we love avocadosΒ here at by CHLOE. This magical fruit (not a typo – it’s actually a berry – WHAT!) isΒ full of heart-healthy fats, antioxidants, and fiber.Β For our Winter Market Special we jazzed up a classic avocado toast by adding roasted kale, a sprinkle of pomegranate seeds, and orange segments (gotta get that Vitamin C!).

The best thing about this avo toast is it can work as breakfast, lunch OR dinner. And did we mention how incredibly photogenic this piece of toast is?

AVOCADO TOAST

1 slice multigrain bread, toasted

1 avocado, pitted and mashed

ROASTED KALE

3 1/4 oz kale, chopped and roasted

1/4 cup extra virgin olive oil

1 pinch fine sea salt

GARNISH

1 small orange

1/3 oz pomgranate seeds

1 pinch red chili flake

1/3 oz almond parm

1 pinch maldon salt

PREP

Pre-heat oven to 325Β°F.

Chop kale.

Peel orange into 7 segments.

ROAST KALE

Toss chopped kale, extra virgin olive oil and sea salt in a bowl and mix well.

Spread evenly onto a baking sheet and bake, for 7-10 minutes or until the ends start to crisp.

Remove from the oven and allow to cool.

TOAST

Toast bread until golden.

Cut in half on a diagonal.

METHOD

In a small bowl, mash pitted avocado with a fork. Transfer to toast and spread evenly.

Garnish avocado toast with roasted kale, orange segments, pomegranate seeds, chili flakes, almond parm and sea salt.

NOTES + STORAGE TIPS

Serve immediately. Avocado will go brown if left out.
