Makes 18 - 25 pancakes
Filed under: breakfasts that impress. Our Cinnamon Roll Pancakes transport all the ooey-gooey deliciousness of a cinnamon roll into neat lil’ (or big) stacks of fluffy pancakes. When topped with Oatmeal Cinnamon Streusel and Vanilla Icing, these pancakes will make the grumpiest morning person into an early bird (speaking of which, try The Early Bird if your more of a savory person).

PANCAKE BATTER
1/4 cup flaxseed meal
1 1/4 cups water
4 1/2 cups almond milk
3/4 cup agave
1 pinch fine sea salt
2 1/2 cups AP flour
3 Tbsp baking powder
CINNAMON SWIRL
4 cups all-purpose sugar
1/4 cup cinnamon
1 1/4 cups flour
1 1/4 cups vegan margarine, softened
VANILLA ICING
1 Tbsp vanilla paste
1 Tbsp vanilla extract
2 1/2 cups water
3 1/2 cups powdered sugar
Oatmeal Cinnamon STREUSEL
4 1/2 cups rolled oats (divided in half)
1 cup brown sugar
1 pinch fine sea salt
1 pinch cinnamon
1/2 cup extra virgin olive oil
2 Tbsp water
PREP
Soak the flaxseed meal in water for 10 minutes.
Pre-heat oven to 325°F.
PANCAKE BATTER
Combine flaxseed meal with water, almond milk and agave in bowl. Set aside.
In a different bowl, combine sea salt, AP flour and baking powder. Set aside.
Combine both mixtures and whisk together. Do not over-mix (if batter is too loose, add in more flour, 1 Tbsp at a time until it thickens to desired consistency).
CINNAMON SWIRL
Add sugar, cinnamon, flour and softened margarine to a bowl. Stir well to combine. Place in a pastry bag and cut a ¼ inch slit off the tip of the bag.
COOK
Over medium heat, grease a griddle and pour batter. Add in the Cinnamon Swirl mixture, in a circular motion to create a swirl.
When pancake begins to bubble, flip it over and cook 1-2 minutes on the other side.
VANILLA ICING
Add vanilla paste, vanilla extract, water and powdered sugar in a small bowl. Whisk to combine.
OATMEAL CINNAMON STREUSEL
Pulse half of the rolled oats in a food processor, until well combined. Pour into a bowl and add the other half of rolled oats.
Add brown sugar, sea salt, cinnamon, extra virgin olive oil and water, and mix until well combined.
Spread Oatmeal Cinnamon Streusel on a parchment paper-lined sheet pan, and bake at 325° for 15 minutes.
Remove from oven and allow to completely cool.
NOTES + SERVING TIPS
Top each pancake with Oatmeal Cinnamon Streusel. Drizzle Vanilla Icing on top.
Serve immediately.
